Desktop Recording

OBS Studio is a free and open source software for video recording and live streaming.   Under 'Settings', set the 'Recording Quality' to 'Indistingushable Quality, Large File Size', and use the default 'Recording Format' of 'mkv'.  

In the 'Sources' window, click the '+' button and choose 'Display Capture'.   If you have an extended display, you can choose what diaplay (monitor) you want to record.  

 

Video Editing

OpenShot Video Editor is a free open source software for editing videos.   I found the user interface intuitive, and with enough features to satisfy all of my video editing needs.   When you export a video, set the target to 'MP4 (h.264), the 'Video Profile' to 'HD 1080p 30 fps (1920x1080), and the 'Quality' to 'High'.   Under 'Preferences', go to the 'Cache' tab and set the 'Cache Limit (MP)' to '2500', and the 'Image Format (Disk Only)' to 'PNG'.
